INGREDIENTS

 PINK FILLING: Which is the cream cheese filling with ham, this pink tone is due to the sausage.  You can replace the ham with any sausage such as salami, parma ham, sausage (why not?) browned Calabrian sausage, etc….
 The sausage is blended in a blender with cream cheese, the harder it is, the greater the chance of having little pieces in the filling.  I love.

GREEN FILLING: The green filling is the Broccoli filling.  Believe me, the taste is delicious.  Usually the green ingredients bring freshness and flavor to the cream cheese filling.  Try preparing it with basil for a super fresh result and a creamier cream cheese, sautéed spinach is a version that I also love.  Blend the broccoli in a blender and mix it with the cream cheese.

YELLOW FILLING: I used turmeric, you can use spices and powdered ingredients to change color and flavor. Yellow color also use yellow mustard, cheddar cheese or roasted peppers.  As you wish.

3 cream cheese fillings: A delicious appetizer

INGREDIENTS

 half a cup of olive oil

 half a cup of water

 2 cups of sweet cassava starch

 1 cup of sour cassava starch

 1 teaspoon of baking powder

 salt to taste

 2 eggs

METHOD OF PREPARATION

 Preheat your oven to 180 degrees. Grease a baking tray.

 Add the eggs, crumbled feta cheese and baking powder to the dough and mix until well incorporated.

 Using your hands, form small balls with the dough and place them on the prepared baking sheet.

Bake the Greek cheese bread in the preheated oven for 20 minutes or until golden.

Greek Cheese Bread

Ingredients

 Homemade or industrialized tomato sauce

 grated Parmesan cheese

 lemon

 2 medium zucchini

 2 cloves of garlic, chopped

 salt, finely chopped onion and black pepper to taste

 Ricotta I used a whole 300 gram unopened one.


Method of preparation

 1-Cut the ricotta into small cubes and in a pan make a paste with golden onion, ricotta, salt, garlic, freshly ground pepper and juice of half a lemon (or a whole lemon if you prefer – keep tasting).

 2-Slice the zucchini into thin slices lengthwise (I did it using the vegetable slicer).  I sliced mine with the skin on, as they were organic (if they weren't, I would prefer to remove the skin).

 3-In a frying pan with olive oil, grill the zucchini on both sides and season with salt and pepper.

 4-With the grilled zucchini, start making the rolls, placing a little filling in the thickest end and rolling until the end.

 5-Place all the rolls in a pyrex dish, as in the photo, and pour a little tomato sauce and grated parmesan on top.  Set it aside to brown a little.

 6-Finish with basil leaves on top of each roll.

Ingredients:

 Marinade:

 1 whole chicken, cut into pieces (or the desired amount of thighs, drumsticks, wings, etc.)
 1 liter of buttermilk (or 1 liter of milk with the juice of half a lemon as a substitute)
 2 tablespoons chicken seasoning (recipe below)

 Chicken Seasoning:

 2 tablespoons paprika

 If you don't have buttermilk, add the juice of half a lemon to 1 liter of milk and let it sit for 10 minutes.
 Season the Chicken:
 In a large bowl, combine chicken with buttermilk (or lemon milk), chicken seasoning, and salt.
 Make sure all pieces are well covered.
 Leave to marinate in the refrigerator for at least 4 hours, preferably overnight.
 Chicken Seasoning:

 Combine the Ingredients:
 In a small bowl, mix all the chicken seasoning ingredients.  Reserve.
 Breading Dough:

 Prepare the Dough:
 In a large bowl, mix all-purpose flour, cornstarch, chicken seasoning, salt, and black pepper.
 Fry the Chicken:

 Heat the Oil:
 In a large pan, heat the vegetable oil to 170°C to 180°C.
 Bread the Chicken:
 Remove the chicken pieces from the marinade and dip them in the breading mixture, completely covering each piece.
 Fry the Pieces:
 Carefully place the chicken pieces into the hot oil, avoiding crowding.
 Fry for 12 to 15 minutes, turning occasionally, until golden and cooked through.
 Drain and Serve:
 Remove the chicken from the pan with a slotted spoon and place on a wire rack to drain any excess oil.
 Serve while hot and crispy.
 Enjoy your homemade Fried Chicken, as crispy as KFC's!

 500 grams of pork loin

 250 grams of thinly sliced bacon

How to make Sirloin with Bacon:

1- Start by separating the ingredients.  Separate the pork loin, the seasonings of your choice, the mustard, the Worcestershire sauce, the lemon and the orange.  Separate the bacon.  Ideally, the bacon is cut into thin slices, to wrap around the loin.  Finely slicing will make this step of the recipe preparation process easier.



2- Once this is done, clean the loin well and remove all the fat.  The loin will be wrapped in slices of bacon, ideally without external fat.  Make cuts with a knife in the pork loin, so that the seasonings enter the meat and are absorbed.

3-Then add the lemon and orange juices to the pork loin.  Let it absorb the flavors for about five minutes.

4-Then add salt and seasonings of your choice.  Also add the yellow mustard.  Stir everything well to incorporate the flavors.  Leave covered for about five minutes.

5-Then add the ground pepper.  Prefer freshly ground pepper.  Again, mix well to incorporate the flavors.

6-Once this is done, wrap the pork loin with the sliced bacon and, using wooden sticks or string, attach the bacon to the meat.  This prevents them from coming loose when baking.  In the roasting pan, place the meat.  Brush the seasoning over the meat.

7-With the oven preheated to 220 degrees, place the pork loin to roast.  Bake for approximately 40 minutes.

8-After this time, remove your loin with bacon from the oven, let it rest for a few minutes and you can slice it.

- Ingredients:
 
1.5 kg of fish (Traíra, Merluza, Hake, Whiting, Dogfish, Tilapia)
 2 crushed garlic cloves
 1 lemon juice

 - Method of preparation:

 In a bowl, combine the wheat flour, cornmeal and cornstarch (Maizena).  Coat the fish in this mixture and then fry it in hot oil.
 Place the fish on paper towels to remove excess oil.  Serve immediately.

INGREDIENTS:

5 eggs
 2 cups of sugar
 2 cups of wheat flour
 1/2 cup 50% cocoa chocolate powder
 1 cup of hot milk
 1 tablespoon baking powder
 Filling:
 1 and 1/2 tablespoons of butter
 1 can of condensed milk
 1 package of medium grated coconut
 METHOD OF PREPARATION:
 Beat the whole eggs with the sugar until they increase in volume.  Dissolve the chocolate in the hot milk and, without stopping beating, add it to the eggs beaten with sugar.  Beat for another 3 minutes.  Using a spatula, gradually add the sifted wheat flour and yeast.  Line the bottom of the pan with baking paper.  You should not grease the sides of the pan, so the cake adheres and rises evenly.  Bake at 180 degrees.  To unmold, just use a knife and it comes out perfectly.  Cut in half and stuff.
 Filling:
 Melt the butter in a pan.  Pour in the milk and wait for it to heat up a little.  Add the grated coconut and mix well to avoid lumps.  Make it on the stove at medium temperature.  Keep stirring until it starts to come away from the pan.

 150g sugar

 300g flour

 Time may vary, so do the toothpick test: insert a toothpick into the center of the pie;  If it comes out clean, it's ready.
 Remove from the oven and let the pie cool slightly before serving.
