Season the Chicken: In a large bowl, combine chicken with buttermilk (or lemon milk), chicken seasoning, and salt. Make sure all pieces are well covered. Leave to marinate in the refrigerator for at least 4 hours, preferably overnight. Chicken Seasoning:
Combine the Ingredients: In a small bowl, mix all the chicken seasoning ingredients. Reserve. Breading Dough:
Prepare the Dough: In a large bowl, mix all-purpose flour, cornstarch, chicken seasoning, salt, and black pepper. Fry the Chicken:
Heat the Oil: In a large pan, heat the vegetable oil to 170°C to 180°C. Bread the Chicken: Remove the chicken pieces from the marinade and dip them in the breading mixture, completely covering each piece. Fry the Pieces: Carefully place the chicken pieces into the hot oil, avoiding crowding. Fry for 12 to 15 minutes, turning occasionally, until golden and cooked through. Drain and Serve: Remove the chicken from the pan with a slotted spoon and place on a wire rack to drain any excess oil. Serve while hot and crispy.
