1 whole chicken, cut into pieces (or the desired amount of thighs, drumsticks, wings, etc.)
1 liter of buttermilk (or 1 liter of milk with the juice of half a lemon as a substitute)
2 tablespoons chicken seasoning (recipe below)

Chicken Seasoning:
2 tablespoons paprika
1 tablespoon of salt
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon dehydrated parsley
1 teaspoon cayenne pepper (optional, for a spicier touch)
Breading Dough:
2 cups of wheat flour
1 tablespoon cornstarch
1 tablespoon chicken seasoning
1 teaspoon of salt
1 teaspoon black pepper

Method of preparation:
Marinade:
Prepare the Buttermilk:
If you don't have buttermilk, add the juice of half a lemon to 1 liter of milk and let it sit for 10 minutes.
Season the Chicken:
In a large bowl, combine chicken with buttermilk (or lemon milk), chicken seasoning, and salt.
Make sure all pieces are well covered.
Leave to marinate in the refrigerator for at least 4 hours, preferably overnight.

Combine the Ingredients:
In a small bowl, mix all the chicken seasoning ingredients. Reserve.
Breading Dough:
Prepare the Dough:
In a large bowl, mix all-purpose flour, cornstarch, chicken seasoning, salt, and black pepper.
Fry the Chicken:
Heat the Oil:
In a large pan, heat the vegetable oil to 170°C to 180°C.
Bread the Chicken:
Remove the chicken pieces from the marinade and dip them in the breading mixture, completely covering each piece.
Fry the Pieces:
Carefully place the chicken pieces into the hot oil, avoiding crowding.
Fry for 12 to 15 minutes, turning occasionally, until golden and cooked through.
Drain and Serve:
Remove the chicken from the pan with a slotted spoon and place on a wire rack to drain any excess oil.
Serve while hot and crispy.
