Most bananas in stores are subjected to ethylene in agriculture warehouses which jumpstarts their ripening and once started, they ripen much faster than untreated bananas. Due to the quick ripening those bananas don't have an opportunity to develop the complex flavors and sugars that slow ripening provides.
