One of my recent hobbies is making my own sodas. I ferment almost everything... Here below: pineapple, mango, beetroot, and ginger (the ginger bug, used as a starter, for the first three)

Pineapple and mango sodas, before getting refrigerated for later consumption. I'll reuse the flesh for a several subsequent batches...

AMA!

Do you add sugar?

Yes, I do. It helps with the fermentation process. I also added the ginger bug. and a bit of maple syrup, for the same reason, and also for the taste.

Pineapple, without a doubt! Especially with the ginger taste. I'm trying mango later today for the first time and might change my mind, though... Beetroot is an acquired taste, a mix of earthy, sweet, and sour. The first batch is always very thick, and it's good to dilute in (sparkling) water, with optional sugar for taste. Oh. I almost forgot about fermented oat, it's called kvass, also nice.

I never tried kvass soda

Easy tu make, and delicious as well. In general I will drink in the morning on an empty stomach, or in the evening. I always get a buzz from it, possibly because I don't drink alcohol and my tolerance is very low.
