A cookbook published in 1963 lists nearly two dozen nutria recipes, including Chicken Fried Nutria and Macaroni-Nutria Casserole. The state of Louisiana has even shared a recipe for Smoked Nutria and Andouille Sausage Gumbo.

Nutria meat is very tasty.
In my country, during communism (until 1990), it was not allowed to keep farm animals (pigs, calves, etc.) (except chickens), so most people bred nutria, from which various meat dishes were made.
Personally, I did not experience much communism (I was born in 1985), but I have eaten nutria meat recently. You can make excellent sausages and very delicious salami from it.
You should know that nutria are very clean animals, the water in their pool needs to be changed every two days at most, and they eat almost all vegetable scraps.

I remember having a pet guinea pig as a kid. My grandfather, an Italian immigrant, told me they were delicious. He ate them in Italy.
Yes, I heard nutria are really delicious.
