off the bat I will say, I'm not super worried about this, but wanted to ask.
so if we presume a ton more adoption (think bitcoin standard levles) and usage of lightning in the coming years, would there be a risk of a smaller number of service providers (by this i mean things like Wallet of Satoshi), getting way bigger and dominating the space (big player centralization risk)?
are we so early that this is even worth paying attention to?
if it was a risk, is there anything that can be done, other than running your own lightning node (which i don't think most people would do )?

While I guess there's always risks. I think that graph looks way different to three to four years ago, in both scope and distribution. Similar to mining situation, to some degree, I guess.

Not to cast whataboutism, but it's not specifically a problem related to LN, more the internet.

Yes, Breez SDK have a couple of nice mobile LN nodes like Volt, Lipa and some others. Then you have Green wallet: https://darth-coin.github.io/wallets/getting-started-greenwallet-en.html
A centralisation of Lightning services would be a problem, sure. But it's a uniquely "equal opportunity space" where launching a competing service is relatively easy (compared to starting a new fiat bank). So it's all in the hands of the plebs to fight against this threat.
That being said, running a Lightning service is a business and you should treat it as such. Most plebs will be running private Uncle Jim nodes.
