I haven't read the science, but I think that the bacon you buy in the supermarket has some other ingredients added to extend its shelf life. But this is valid for almost everything else in the supermarket. Why is bacon being singled out, then?

Probably because it's full of animal fats, which according to modern dietary advice are unhealthy (despite being the bedrock of human diets for millennia). Bacon is particularly fatty as far as the commonly-consumed red meats are concerned.
