It was just a randomly selected date @HardMoney but I'm available to draft Saturday and I can set it in stone if everyone agrees. Saturday at 1800EST work for everyone?

I had wanted to. However, due to having so many first time fantasy players, I didn't think it fair to charge so for now and at least this season, I'm keeping it free. In the future however, I'm very up for it.
However, I am not opposed to weekly wagers between opponents, but that would be managed by them.

I've joined the league.
Do I need to draft straight away or is it game wise selection?

So we'll be drafting at the same time in an auction format.
Once the drafts finished you'll have your team for the season, each game week you choose who to start or sit, you can add players from waivers via faab dollers each week and drop players you no longer want. Trades are also highly encouraged if you like a player on another owners team, reach out, see if you can get a deal going.
Just try to remember to set your line up each week.

I think the platform allows you to fill out a roster after the draft. But you wouldn't be able to draft anyone else.

Correct, the apps UI for drafting is pretty helpful honestly.
You can also do it on desktop by going to sleeper.app and login as normal. If you prefer desktop to mobile.
I estimate the draft to take maybe an hour, maybe 2. Should be ok with about 2mins per pick.

Yep, you'll see the roster size in the team section of the app, it's an auction draft as there's no fair way to do snake or linear without a predetermined draft order.
So the person on the clock nominates a player to be bid on. Everyone bids and highest bid wins. You only have 200$ budget, so bid accordingly.
