Oat milk is a milk substitute without the nutrition of milk. It contains antinutrients like seed oils (canola oil, etc). Plus all kinds of extra chemicals, to give it a similar texture. It has almost no protein. Milk is one of the most nutritious foods around.
Why would you drink oat milk? There's lots of things that have been engineered by food scientists to stimulate our taste buds, but are long-term harmful.
This is coming from the perspective of someone who's been carnivore for about 3 months. But even before that, I tried hard to avoid highly processed "new" foods, that our grandparents would have ever heard of.
I'm going to put in a plug for a book here - The Big Fat Surprise by Nina Teicholtz. I wrote a post about it - This book is blowing my mind - The Big Fat Surprise by Nina Teicholtz.
This book was the mind opener for me, that showed me just how corrupt the whole system was, that created our "nutritional guidelines". It opened the door to looking at new ideas about nutrition.

What about if I take some oats and put them in a blender and make my own oat milk. That should be better right? Cows milk freaks me out. Not going to lie

Avoiding the extra anti-nutrients in commercial oat milk would be a good thing. I think that this could be a useful step, one that may eventually lead you to dropping non animal-based foods.
I know it sounds weird, but check out interviews/podcast/videos with Anthony Chaffee, Shawn Baker, and Ken Berry.
It's been a game-changer for me.
