I'm often doing that. But not to save money.
I used to do intermittent fasting and found breakfast to be the easiest meal to skip. Because in the evenings I'm hungry.

I eat as much fatty red meat as I can, and I can go more than a day without the slightest hunger.
I just discovered that eating not just until satisfied, but until i physically can’t eat any more, is the key to getting down to 1 meal per day, where before i was at 2.
