How is Relai non-kyc? I thought their payments methods were bank transfers and credit cards?

So in that sense nothing is really non-kyc as you are relying on third-party established financial institutions. Unless you are buying cash or mining in a certain way.

Bitcoin ATMs can be used to, although usually a high markup.

In my experience Bitcoin ATMs typically require AML (which is a sort of KYC).

There are services to get a one-time phone number to use at certain ATMs or you can get a prepaid phone w/service for cheap and use that one.

Not only that. Azteco wasn't created with non-KYC in mind and certainly not a priority. Stackers just figured out a way they could use it for that - provided you know what you're doing. And last I checked some months ago, their support staff won't even answer questions about non-KYC.
To be fair: I guess the above may apply to some of the other often listed non-KYC services as well.
