if I want to add a new coin (not ERC20), is it possible to do it on my own w/o ledger having to add support?
Any hw wallets that let you do this?

You can not just add any coin.
Every coin has its on address types, node software, etc..
The hardware device needs to be compatible.
Here is the compatibility list for Ledger: https://www.ledger.com/supported-crypto-assets
