Ideally I would be able to get root on the device and put my own firmware on it. I might be able to use a raspberry pi I embed into it but really I want a stand alone smart tv where I control all the firmware. Extra points if it was built in jtag or serial ports

LG OLED and Sony Bravia, the models from 2018 to 2020, are already a bit "old" but you can do quite a few things with them.
The newer ones are less manipulable.

Great question. Samsung kinda sucks, but I was able to side load apps into the Tizen OS.
The status quo is to get some HDMI device with Android TV on it. You can now also control that with the TV remote...
