Until the cookie I just ate, today was a pretty stellar day: slept well, ate well, fasted, did some physically demanding yard work in the hot Sun, walked the dog a few times.
How did the stackers do today on maintaining their ~HealthAndFitness?
Unfortunately, broke the day by eating frozen and heated up food from China. Had to satisfy on of my kid’s preferences in food. He also cooked egg plant, which was OK with rice.

I was amazed at how much vegetable oil the Chinese consume. One thing I saw indicated that it's most of their calories. I did really enjoy the food while I was there, though.

I am really leery of Chinese food, since it has made me extremely ill several times, especially the hot pot. Yeah, seed oils are some of the worst available for inflammation. We try to cook in butter when we cook, bacon fat works well, too. The kid used the ”vegetable oil” we use for lubricant on pressure cooker gaskets when he cooked the eggplant, until we told him to give it up and use the butter.

I usually go with olive, avocado, or coconut oil, depending on what I’m making.

We also have olive and coconut oil. Mushrooms in coconut oil cannot be matched. If we have to use an oil we go with olive oil.

Not bad today! Got my steps in, skipped the junk food (barely), and did a quick workout at home. Still fighting the urge to snack late at night though… but overall, calling it a win. Let’s keep stacking healthy days!

That late snacking urge is such a pain in the butt. I was doing fine until my kid annoyed me and I saw the cookies on the counter. Nom nom nom.
