You don't even need bitcoin core fully synced to use it. You have many ways for the backend funding:

phoenixd server is instant
LND with neutrino is almost instant, as I explained here: #439263
many other backend here https://docs.lnbits.org/guide/wallets.html even another lndhub account from another lnbits, custodial accounts, NWC accounts...
even fake-wallet is good for testing, as I explained in this guide: https://darth-coin.github.io/merchants/lnbits-saas-schools-events-en.html

yeah i wasn't sure which way to go im following raspibolt on a rasberrypi 2 (im aware it may be too slow)

I also want to have a like local lightning payment pos if you have any suggestions. It would be great if it was totally offline. Lnbits looks like it has a bunch more features so I was working towards it but ive also looked at https://btcpayserver.org/ but it seemed less used
