I enjoyed trying to figure out scaling solutions for those problems. It'll take creativity on our parts, as well.
Let me know if you come up with any good scaling solutions!
Part of me wonders whether we even need to bother with assessment. Make them do a project, help them where they need help, but don't worry about accurate grades. Their future employers will assess whether the projects were good and whether they acquired any skills

A friend of mine and his math department started implementing a portfolio of work for students to be able to show employers. I'm not sure how that's going, but I like the idea.
My scaling solutions are usually some form of outsourcing: I replaced partial credit with making students do another assignment explaining their own mistakes, I used Khan Academy math modules, I made them go to the tutoring center for some things before they could come to me, I had them correct each other's work.

I like the idea of making everyone keep a portfolio. I should bring up this idea with my department. Maybe we can require every upper division elective to require a project that will go into this portfolio.

That's basically what they did.
