why not simply use copper cezve? It forms beautifully.

Because it is very laborious and time consuming. Copper needs to be coated with tin. 🥰

No, no. Tin flakes off over time, especially if coffee is brewed at high temperatures. I would rather make coffee with the same quality in one minute without paying attention, than stand and stir for five minutes.
