My favourite Vietnamese food is not pho. It is Bánh xèo, which is a Vietnamese savory pancake made with rice flour and filled with delish ingredients like shrimp, pork, bean sprouts, and lettuce leaves. I dip this culinary delight into a dipping sauce (nước chấm) and smack my fingers with joy!

I was a fan of scallion pancakes.
People thought it was just a normal thing, but we dont really have it in the usa.
Especially ones folded so many times!

But l used to visit the stalls and buy scallion pancakes all the time.
Each vendor made it a different way!

My wife specially woke up at 5+am to try one particular popular scallion pancake stall so as to beat the queue. If left to her own devices, she would wake up around 11am haha
