I was never interested in the differences between ice cream and gelato, but I recently learnt that the main ingredient in ice cream is air. This piqued the curiosity of the Science teacher in me. Did some research - apparently, gelato is churned at a quicker pace than ice cream, so less air is incorporated into the mixture. This also explains why gelato has a more intense flavour than ice cream.
