The years are staggered like that due to the actual launch windows. Launching to Mars is currently only done every two years when the planets are closest hence the reason for 2026 and 2028.

I’m not sure what the difference is going to be in the vehicle but given how SpaceX is supposed to land the Artemis crew on the Moon in I want to say 2028 I would think the uncrewed Mars mission could be used to further demo the capabilities

Does this mean a crewed mission will be out there for 2 years to return? Or will they just go take a dip and come back ASAP?

From my understanding those that make the first trip at least at first are making a one way trip. It will take time for the infrastructure and systems to be set up to return them. An example is the Rover samples that are currently stuck on Mars without a clear way to retrieve them and get them back to earth
