I would recommend TailOS in live mode with persistent storage, it already includes the Electrun wallet, but you can install Sparrow on it. You can disable networks to make a completely offline system, and all from a pendrive. You wouldn't need special hardware or the cost of buying new equipment, just have a backup of the memory and of course the seed backed up.
