good question, i also wonder why there are no sports betting apps on lightning.
average bet size is typically quite small ($8-10), and instant settlement is a big draw.

bc.game is the only one which accepts btc lightning and has sports betting on it!

and yes.. deposits using LN are instant. Betting on sports though have the usual 5 to 10 seconds settlement cause of surebet protection!

Ben carman worked on a DLC for betting on super smash brothers games.
It's certainly as achieveable and would make a ton of sense (e.g poker games where there is a high number of transactions amongst multiple parties)
