I wouldn't paint Windows 10 as being "old" because it was originally released in 2015. It's been getting monthly patches since then and it'll continue being supported for 5+ years.

I think the bigger issue would be keeping these machines disconnected from the internet. No need for patches if it's an isolated system running DOS.
