I am a huge fan. I used to buy kimchi, but now, I have switched to home-made fermented ginger. It's very easy to make.
I use it to make lemonades (the fermented ginger, with fresh lemon juice, sparkling water, sweetener, and ice), or add it to home-made juices and let it ferment for a couple of days before drinking.
Give it a try!
