This morning we'll be making Breakfast Crepes with Spinach and Feta!

Ingredients:

  • For the Crepes:
    • 1 cup all-purpose flour
    • 2 eggs
    • 1/2 cup milk
    • 1/2 cup water
    • 1/4 teaspoon salt
    • 2 tablespoons melted butter
  • For the Filling:
    • 1 tablespoon olive oil
    • 2 cups fresh spinach
    • 1/2 cup crumbled feta cheese
    • 4 eggs (for sunny side up)
    • Salt and pepper to taste
    • Optional: chopped fresh herbs (such as parsley or chives)

Equipment Needed:

  • Non-stick skillet
  • Mixing bowl
  • Whisk
  • Spatula

Instructions:

1. Make the Crepe Batter:

  • In a large mixing bowl, combine the flour and eggs.
  • Gradually add in the milk and water, stirring to combine.
  • Add the salt and melted butter, and beat until smooth.

2. Cook the Crepes:

  • Heat a lightly oiled non-stick skillet over medium-high heat.
  • Pour or scoop the batter onto the skillet, using approximately 1/4 cup for each crepe.
  • Tilt the pan with a circular motion so that the batter coats the surface evenly.
  • Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Set aside and keep warm.

3. Prepare the Filling:

  • Heat olive oil in a skillet over medium heat.
  • Add spinach and sauté until wilted.
  • Season with salt and pepper.

4. Cook the Sunny-Side-Up Eggs:

  • In the same skillet, crack the eggs one by one, being careful not to break the yolks.
  • Cook on low heat until the whites are firm and the yolks are just set but still runny.

5. Assemble the Crepes:

  • Place a crepe on a plate.
  • Spoon some sautéed spinach and sprinkle feta over half of the crepe.
  • Carefully place a sunny-side-up egg on top of the spinach.
  • Fold the crepe over and garnish with fresh herbs if using.

6. Serve:

  • Serve hot with additional toppings if desired, such as a drizzle of hollandaise sauce or a sprinkle of paprika.
