This morning we'll be making Breakfast Crepes with Spinach and Feta!
Ingredients:

For the Crepes:
- 1 cup all-purpose flour
- 2 eggs
- 1/2 cup milk
- 1/2 cup water
- 1/4 teaspoon salt
- 2 tablespoons melted butter

For the Filling:
- 1 tablespoon olive oil
- 2 cups fresh spinach
- 1/2 cup crumbled feta cheese
- 4 eggs (for sunny side up)
- Salt and pepper to taste
- Optional: chopped fresh herbs (such as parsley or chives)
Equipment Needed:
- Non-stick skillet
- Mixing bowl
- Whisk
- Spatula
Instructions:
1. Make the Crepe Batter:
- In a large mixing bowl, combine the flour and eggs.
- Gradually add in the milk and water, stirring to combine.
- Add the salt and melted butter, and beat until smooth.
2. Cook the Crepes:
- Heat a lightly oiled non-stick skillet over medium-high heat.
- Pour or scoop the batter onto the skillet, using approximately 1/4 cup for each crepe.
- Tilt the pan with a circular motion so that the batter coats the surface evenly.
- Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Set aside and keep warm.
3. Prepare the Filling:
- Heat olive oil in a skillet over medium heat.
- Add spinach and sauté until wilted.
- Season with salt and pepper.
4. Cook the Sunny-Side-Up Eggs:
- In the same skillet, crack the eggs one by one, being careful not to break the yolks.
- Cook on low heat until the whites are firm and the yolks are just set but still runny.
5. Assemble the Crepes:
- Place a crepe on a plate.
- Spoon some sautéed spinach and sprinkle feta over half of the crepe.
- Carefully place a sunny-side-up egg on top of the spinach.
- Fold the crepe over and garnish with fresh herbs if using.
6. Serve:
- Serve hot with additional toppings if desired, such as a drizzle of hollandaise sauce or a sprinkle of paprika.
