Do you guys always try to consolidate when fees are low or do you spend one at a time and not worry about future prices of fees ? Do you have a lowest amount that you would hold as a utxo? I'm thinking no lower than 0.003 btc. Thanks.

I feel 0.05 per UTXO should be comfortable. But at the very min have 0.01 per UTXO. And yes, you don't want to be consolidating when fees are through the roof. I think anything below 25 sat/vB is a good time to do it.
