There's a huge chicken and egg problem with small in-person txs. ie why would a business accept bitcoin if there aren't many customers looking to pay in it? I'd focus on businesses that already go to great lengths to protect customer privacy and accept a lot of cash. Maybe out-of-pocket medical clinics and hospitals? Casinos?
