If you host yourself a watchtower and become offline, the problem is remaining

Yes, but the period depends on the settings of the channel. If others close channels with you in a previous state (i.e. they claim more sats from the channel balance than they should), an offline node won't be able to prevent this by sending the "punish" transaction. Watchtowers fix this
