Does anyone know how these POS operate?

they are using the bolt card from coincorner so it is based on lnurl-withdrawal. you don't need to use coincorner in order to use bolt card tho, you can provision it yourself

yep, these just follow the standard lnurl-withdraw flow (with the addition of lud-17 to facilitate bolt card replay protection), POS will also accept standard lnurl-withdraw flow without the need for lud-17.
Strictly speaking the full lifecycle of a bitcoin transaction has always been faster than a full credit card transaction as settlement for the latter can take days. This makes me wonder at what point should a lightning transaction be consider settled? It seems to me that if you have a well set up node that there should be no counter party risk? Or would it take the closure of a channel to consider it settled?
