Forget everything you thought you knew about water. It's not actually a single liquid. In fact, a simple glass of water contains two distinct liquids mixed together, each with its own unique properties that change depending on the temperature.
The quacks with their theory about Water Memory were onto something ;)

I've read about it before, but I never really understood it. I need to find a good article, have some time, and be in the right headspace to really get it. :)

There is not much to get. It's pseudoscience, the same way homeopathy is.
There have been a few attempts at explaining it more generously.
