I own an electric 'fat' bike. It's great. As it's got a twist throttle, it'll still climb hills even with a chain drop.
I often feel like a teenager again on it.

It's not a big name just a rebadged Chinese ebike (now showing itself as the small, ebike retailer close to me). I pickef it because it was a work-horse and the local firm had great after sales spares technical help.
My ebike came complete and is safe with Panasonic cells all in all approx $1.3k and has lasted 10 years - but I've swapped the battery for a new one since.
I heard from firefighter reports that the ones that are cited as causing the most battery fires are often cheap conversion kits using cheap cells.
It's the cheap cells that cause the fires. Look for batteries that have reliable cells in them like Panasonic or Samsung.
