Both torrents and nostr don't allow uploading to a centralized server... Because they are both user-to-user protocols.

Is there maybe a "complete idiots guide to torrents" that you could share? It seems interesting, I know very little about it though.

Yea, it's common to use "proxys" to avoid the take down order by some governments to some sites, with this, you could have many proxys to share magnet links.
