Ingredients for the filling:
6 to 7 apples, peeled, cored, and sliced (varieties like Granny Smith work well) 3/4 cup sugar 1/4 cup brown sugar 1 teaspoon cinnamon 1/4 teaspoon nutmeg 1/4 teaspoon salt 1 tablespoon lemon juice 1/4 cup all-purpose flour 2 tablespoons butter
Instructions:
For the crust, mix the flour, salt, and sugar in a large bowl. Add the butter and mix until it resembles coarse crumbs. Add cold water, one tablespoon at a time, mixing until the dough starts to come together. Form the dough into two discs, wrap in plastic wrap, and refrigerate for at least 1 hour. Preheat the oven to 425°F (220°C). For the filling, toss together the apples, sugar, brown sugar, cinnamon, nutmeg, salt, lemon juice, and flour in a large bowl. Roll out one of the dough discs and line the bottom of a pie dish. Pour the apple filling into the crust. Cut the butter into small pieces and scatter over the apples. Roll out the second dough disc and cover the pie. Press the edges to seal and make a few cuts on the top to allow steam to escape. Bake for 15 minutes at 425°F (220°C), then reduce the temperature to 350°F (180°C) and bake for an additional 40-50 minutes or until the crust is golden brown. Allow to cool before slicing. Serve with a scoop of vanilla ice cream if desired.
