I’ve heard a few people say they denominate their spending in btc. I understand how this can work over a long period of time and large purchases. E.g. house 20 years ago cost 100btc today same house costs 25btc. Does anyone else do this and does it apply to every day spending? How does it work on practical terms? Would you convert grocery shops to sats.

Yes, I live only using Bitcoin as payment for years.
Usually the merchants I onboarded are local small shops.
For the moment, the process is simple: they open their LN wallet, put the amount in fiat they have to charge me and I scan the QR and pay in sats. That's it.
In their accounting system the sale ticket is still in fiat and payment method is registered as "cash".
No more bullshit.
Bitcoin is cash money.
I personally do not follow the price of BTC in fiat. I don't care anymore.
I earn in BTC, I spend in BTC, I hold in BTC.
Is just a matter of time until people will start displaying the products price in sats directly.
