You can just register at https://coinos.io with username+password and that gives you Lightning address username@coinos.io.
Anyone that has a wallet that supports Lightning addresses (e.g. in Breez just paste it in the Send>Invoice menu) can then pay you.

Are these also backwards compatible e-mail addresses? While coinos.io hasn't built this feature yet, is it possible for them to (for instance) forward e-mail sent to the same address?
I don't see why not. Any email provider could support Lightning Addresses.
To run your own coinos-server, you would need to stand up your own Lightning, Bitcoin and whatever else server?
I know it's kind of against the spirit, but for people who don't want to run their own Bitcoin/Lightning/etc. servers, like a coffee shop kiosk, what are the options?
They have to use a centralized solution, like coins.io or (soon?) stacker.news.
There may be an option to have a decentralized routing scheme with bolt12, but at this point someone still needs to register a domain.
