I would love to hear your opinion on the privacy and security of various node options for lightning. Umbrel in particular.

I steer clear of Umbrel due to their avoidance of going FOSS, but that type of node is a great idea for less technical users.

I'd specifically recommend Ronin Dojo for on-chain, and RasPiBlitz or Citadel for off-chain -- all are FOSS, well built, and have great people behind them. Privacy for all will be comparable as you're self-hosting and fully self-sovereign in each scenario, and all support Tor/are Tor-only as well.
