What you barely mention in a cryptic way is that in 1947 the UN General Assembly voted in favor of resolution no. 181 of splitting the former British mandate into two, allowing both interested parties to establish their own independent states. What Jews did? Declared independence. What Palestinian Arabs did? Didn't bother declaring independence, even though they had their chance and full support of the UN to do that just like Jews did. But were more than happy to declare war on Israel. Go figure.
