As someone who doesn't work in bitcoin (yet), but hosts a regular bitcoin meetup, I find that many people experience surprise when they find out what I do for work. Bitcoin is for everyone, but it seems that we often have a preconceived notion of what it means to be a bitcoiner.
What is a bitcoiner to you?

I think Bitcoiner should replace the term Bitcoin Maximalist for the most part. Bitcoiner to me is someone who believes Bitcoin is the only solution to fiat currency, and holds some Bitcoin, but like @birdeye21 said, I won’t crucify them just yet for certain things. While I think a true “Bitcoiner” wouldn’t hold all of their stack in custodial wallets, it’s ok if they hold some in custody / especially if it’s a lightning wallet. Also think it’s ok for now if they trade altcoins on the side, but think the strict definition of “Bitcoiner” should also mean that that person holds vastly more bitcoin than any other digital currency while acknowledging that all other digital currencies are technically nothing in comparison to bitcoin

To my mind a Bitcoiner is someone dedicated to the cause. You can hold bitcoin, but a Bitcoiner hodls. When the majority of the world uses Bitcoin, Bitcoiners will be the defenders of the code, those who keep the 21m chain running when governments collaborate to fork bitcoin away from the hardcap.

Is having Bitcoin locked away in Cold storage using, or equivalent to losing your private keys?

Just owning (or hodling) is not using. If you bought a diamond or got one from your grandma 20 years ago, and it has been locked in a safe ever since, are you "using" diamonds?
Using means using, as you would with any other currency.
