Agree, currently a lot of generic economics posts are posted under #bitcoin sub.
I can't think of a single economic topic that doesn't fit into ~bitcoin
But I could think of renaming the bitcoin sub to ~economics. It's just a broader umbrella term
Not all Bitcoin posts are related to economics, there are also pure technical stuff.

Some posts might want to discuss the activities of other countries outside the context of bitcoin adoption. While many of us believe bitcoin will fix a lot of economic problems, it would be nice to explore other economic concepts that play a role in a country's success (independent of bitcoin) in a separate sub.

Why not open up custom subs and moderation ? Reserve the right to close subs with spammy, low quality posts/users. Hygiene.
