In strict order what do you tell them? (i.e. first I get them to download a wallet etc etc...)

This is a rough scheme i usually have in mind when orangepilling noobs, like a ladder to climb from nocoiner, maybe can be of help.
For less than 100$€ - LN custodial, simple, works. just for starting accepting payments. Blink, WOS or lightningTipBot
For more than 100 - onchain - for stacking. electrum (mobile/desktop)
When more than 1000 - hardware wallet + electrum, sparrow, spectre. more serious setup.
And they must read all Darth's guides ;)

I will give them these:
- https://darthcoin.substack.com/p/bitcoin-commandments
- https://darthcoin.substack.com/p/5-stages-became-bitcoiner
I do not start with "hey download this wallet"... first they need WHO they are and WHERE they are... and after that WHAT and HOW should use.
