What do you guys think? Any experience with an anonymous sidehustle denominated in Bitcoin?
For an online hustle, ... the problem is there are literally hundreds of millions of people (if not more) around the world who are candidates for the very few opportunities (remote, anonymous or not even) that exist.
So you end up with a severe mismatch between supply and demand. And with such an oversupply, the compensation levels offered from the demand side trend towards zero. This is not just with online, remote work -- the concept, referred to as the "race to the bottom" applies to all kinds of gigs, including Uber drivers and pet walkers. The pandemic showed exactly what researchers already knew: When full time jobs are converted into gig work, the wages paid by the company go down (as gig workers are available at a lower rate than full time workers), but wages for the gig workers stay stagnant (because, there's way more supply of gig workers than demand warrants).

Now, from the perspective of someone already at the "base of the pyramid" (BoP), ... their opportunities have grown as the result of the growth of the gig work economy. This work does bring at least some compensation available, which is more than what is effectively the $0 that they were earning. So for the BoP, any gig work, remote online work, etc, are opportunities!
That doesn't mean there is no way to earn an acceptable amount online, anonymously, in bitcoin. But you'll likely have to be creative, and operate more like an online entrepreneur than just as a gig worker who competes for the few tasks that might exist.
Not everyone is an entrepreneur, however, and not even every person who could be an entrepreneur has the opportunity -- as unlike with the certainty of income when traditionally employed, a freelancer has no guarantee of receiving anything at all!
So, if you are prepared to be disappointed (presuming you are not someone at the BoP), feel free to peruse the sites and services from this list, though to remain "anonymous", even much of that list shrinks dramatically!
