Is a multisig wallet a viable security option for an individual, or is it too much work and a single 12-word seed phrase plus a passphrase enough?

It is, but it also adds risk (backup, storing of seeds etc). It depends on what you want to achive with the multisig setup.

Exactly.
I see multisig more for cases when are more than 1 individual using the same wallet.
For a single owner I do not see the necessity to use of multisig. Is just like wearing a mask and say it protects you from x bullshit.... in fact it could do more damage than good.
