I think that whatever comes out by searching “plain text editor” on App Store is enough.
iOS doesn’t ship a plain text editor afaik, you don’t know how many times I struggled with basic things like copying the bank’s IBAN or other stuff. I just copy from Notes to a textbox in Messages, and copy again from that textbox to get the plain text version.
