I don't know for certain because WoS isn't open source, but I'd guess WoS is using WASM for their crypto library, which, at least in browsers, is disabled in iOS's lockdown mode.

I've been doing quite a bit of work travel lately, which has caused me to have to put my Apple electronics in lockdown mode. Recently, I noticed that will I was receiving lightning payments, my balance in my lightning wallet was not updating. The balance was staying the same. My tool is Wallets of Satoshi.

As it turned out, with a bit of experimenting, the culprit was the lockdown mode in iOS. While it will allow email, internet and similar go through, including other crypto wallet transactions, it doesn't allow lightning transactions to go through with Wallets of Satoshi. I'm curious if others have had a similar issue specific to lightning wallets or just that one app in particular.
