If you like Cowboy bebop, you will also enjoy Samurai Champloo (same director).
My fav anime is not a serialised one, it's Perfect Blue by Satoshi Kon (RIP). It's extremely cinematic, some big movies like Black Swan and Requiem for a Dream copied its framing quite a bit.
Otherwise a serialised anime I really liked Mushishi, very interesting world building and great concept. I also love Steins gate, Kaguya Sama and Bakemonogatari.
As for manga, I love Goodnight Punpun, Aku no Hana, and Chainsawman. They just offer something no other media can copy. Goodnight Punpun and Aku no hana really changed my perspective in life for a long time.

My Favourite anime series are: One piece, Attack on Titan, Deathnote, Naruto, Hunterxhunter etc
The last anime that really caught my eyes was Sonny Boy.
Still animation but not Japanese, the Lastman TV series is pretty good. I know there's an english dub but you'll have to dig a bit to find it.
My Hero Academia
Rurouni Kenshin [Samurai X] is an awesome anime. It's so good that they made a live-action full-length film about it and it is one of the best films made from an anime. It's in 5 parts.
One Piece best manga ever and the sign of their currency looks like bitcoin. The anime is a little bit shitty tough I recommend people read the comic.
Naruto is still the best anime ever and it has branched to even have a spin off Boruto based on Naruto's son.
I love Bleach but I'm presently watching Eminence in Shadow

I liked the 1995 Ghost in the Shell movie alot.
Dated a girl and we watched a bunch of the studio Ghibli films and I really liked them, it was a while ago, so not sure which ones I saw, except I know I saw Spirited Away, Howl's Moving Castle and Princess Mononoke
That's about all I can remember, though I know I got into a bit of dbz, sailor moon, chobits? and bubblegum crisis as far as series go. Mostly because a friend or gf had me watch it.
