Not necessarily. The merchant can keep whatever percentage of sats you like.

Well, the numbers look inflated because of the same advantage of vice whatever you wanna call it. Can anyone sell in such large numbers a kiosks PoSes which do not or give option to convert BTC to USD instantly?

These numbers for Square are higher because they are not selling a Bitcoin only PoS, instead they are giving option so that they can sell more.

As I understand the merchant signals that they accept Bitcoin and it goes straight to BTC Map. Someone still needs to go there and verify that the claim is true.
These are merchants that most likely already used Square as their PoS. They just turned on the "accept bitcoin" option.
