Two step checklist:
  1. Did you get an email from OpenAI telling you that they lost your data?
  2. Did you get a letter from your bank about why you're not paying the interest on that $25M loan you took out from a Cambodian IP address?
If over the next few years you can answer both questions with no, you're probably fine.

Why would you pass your user's email address to a data analytics platform? That's insane on its own.

Same issue everywhere, we should be stewards of our own data, period. Until that changes it is just a matter of time (not if, just when). IMHO, the penalties for losing data are not high enough, charge them a million per episode, payable to client/victim and you will see how fast that will get fixed.
