Interesting, we are doing it tomorrow so will post some pictures of how it goes, someone should start a Turkey post tomorrow on SN cc @Scoresby

I do the breast until about 120F then wrap in foil with stick of butter until 155 then take it off and let it rest (while cooking in foil turn it over a few times so butter flows everywhere)

Turkey post is a great idea!

I'm using powdered buttermilk and salt this year.
