Raspiblitz has just been updated to v1.12.0, which includes dozens of cool new features.
I've now updated my Raspberry Pi node guide to reflect this latest release, including how to use a single NVMe drive for both booting and blockchain storage. Hope some folks find this useful.
Do it with knots, not core

If you intentionally want to run Knots- You can manually switch your client to Knots on Raspiblitz with instructions here: https://paulscode.com/t/switching-to-knots-on-raspiblitz/654
Raspiblitz currently uses Core v26 and does not update the bitcoin client version very often, and serves well as a consensus node.
